I doubt I recently saw any server which doesn't support at least PHP 5. Of course it would be totally different with PHP 5.4.0 which for now is newest(?) Suggestion:
check all $_session['cart'][$key][0], if you find element with current product_id just overwrite that products data in session with changes you need
